Gen Mai Matcha is a Japanese green tea made by blending powdered matcha with toasted brown rice, giving it a warm, nutty flavor alongside the grassy richness of matcha.

How to brew

  • Tea: 2.5 g of dry tea per 8 fl oz (240 ml) of water
  • Water temperature: 175°F (79°C)
  • Steep time: 2–3 minutes, then strain or remove the tea bag.
  • Cups per ounce: Approximately 11 cups per ounce (28.35 g), using 2.5 g per 8-fl-oz cup. This estimate counts the first infusion only.

Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Grape & Rosemary Tea Breakfast Quinoa with Gen Mai Matcha

Serves: 2

Ingredients

  • 2.5 g Gen Mai Matcha
  • 1 cup water
  • 1 cup seedless red grapes, halved
  • ¼ teaspoon finely chopped fresh rosemary
  • ½ cup dry quinoa, rinsed
  • 2 teaspoons Vanilla Bean Sugar

Method

  1. Heat 1 cup water to 175°F. Steep the Gen Mai Matcha for 2–3 minutes, then strain or remove the tea bag.
  2. Bring the strained tea and quinoa to a gentle boil in a saucepan. Cover, reduce heat and simmer for 15 minutes, until tender.
  3. Rest off the heat for 5 minutes. Fluff and fold in the fruit, fresh rosemary and sugar. Divide into two breakfast bowls.
