Huang Shan Mao Feng
Huang Shan Mao Feng is a green tea from the Huangshan area of Anhui, China. Its spring leaves are carefully shaped and dried into slightly curled yellow-green leaf.
Our tasting notes describe a bright floral aroma, a clear yellow-jade cup and a smooth mix of sweetness, buttery texture and bean-like notes. Brew gently and re-steep the leaves to explore the lighter notes that follow the first cup.

How to brew
- Tea: 2.5 g of dry tea per 8 fl oz (240 ml) of water
- Water temperature: 175°F (79°C)
- Steep time: 2–3 minutes, then strain or remove the tea bag.
- Cups per ounce: Approximately 11 cups per ounce (28.35 g), using 2.5 g per 8-fl-oz cup. This estimate counts the first infusion only.
Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Apple & Ginger Tea Couscous Salad with Huang Shan Mao Feng
Serves: 2
Ingredients
- 2.5 g Huang Shan Mao Feng
- 1 cup water
- 1 cup peeled, cored apple, finely diced
- ¼ teaspoon Ginger Root, powder
- ¾ cup dry couscous
- 1 tablespoon Arbequina Extra Virgin Olive Oil
- 1 tablespoon lemon juice
- 2 tablespoons chopped fresh parsley
- Salt to taste
Method
- Heat 1 cup water to 175°F. Steep the Huang Shan Mao Feng for 2–3 minutes, then strain or remove the tea bag.
- Bring the strained tea just to a boil. Pour over the couscous, cover and let stand for 5 minutes. Fluff with a fork.
- Fold in the fruit, ground ginger, olive oil, lemon juice and parsley. Season lightly; serve warm or chill promptly for a cold salad.
