Gunpowder green tea gets its name from the tightly rolled leaf, which opens as it steeps. This Chinese style brews a relatively full-bodied green tea with occasional smoky notes and a lingering citrus edge.

Try it plain first, then pair it with fresh mint or a squeeze of lemon. A stronger brew cooled over ice makes a refreshing mint tea; use the lower water temperature in the guide to keep the cup balanced.

How to brew

  • Tea: 2.5 g of dry tea per 8 fl oz (240 ml) of water
  • Water temperature: 175°F (79°C)
  • Steep time: 2–3 minutes, then strain or remove the tea bag.
  • Cups per ounce: Approximately 11 cups per ounce (28.35 g), using 2.5 g per 8-fl-oz cup. This estimate counts the first infusion only.

Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Pineapple & Mint Tea Slush with Gunpowder Green Tea

Serves: 2

Ingredients

  • 2.5 g Gunpowder Green Tea
  • 1 cup water
  • 1 cup fresh pineapple, peeled, cored and finely diced
  • 1 tablespoon finely chopped fresh mint
  • 2 teaspoons Vanilla Bean Sugar
  • ½ cup cold unsweetened apple juice
  • ½ cup ice

Method

  1. Heat 1 cup water to 175°F. Steep the Gunpowder Green Tea for 2–3 minutes, then strain or remove the tea bag.
  2. Stir the sugar into the tea and cool. Freeze the tea in an ice-cube tray until solid.
  3. Blend the tea cubes, fruit, fresh mint, apple juice and additional ice to a spoonable slush. Serve immediately in two glasses.
