Bi Luo Chun is a Chinese green tea traditionally associated with the Dongting area of Jiangsu. Its small, curled leaves give the style its name, often translated as green snail spring.

Our tasting notes describe a delicate leaf with a deep spring fragrance and a mellow cup. Brew with the cooler water in the guide below to bring out its soft green character, then try another infusion before discarding the leaves.

How to brew

  • Tea: 2.5 g of dry tea per 8 fl oz (240 ml) of water
  • Water temperature: 175°F (79°C)
  • Steep time: 2–3 minutes, then strain or remove the tea bag.
  • Cups per ounce: Approximately 11 cups per ounce (28.35 g), using 2.5 g per 8-fl-oz cup. This estimate counts the first infusion only.

Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Pear & Pistachio Chilled Tea Fruit Soup with Bi Luo Chun

Serves: 2

Ingredients

  • 2.5 g Bi Luo Chun
  • 1 cup water
  • 2 cups ripe pear, cored and diced
  • 2 tablespoons chopped shelled pistachios
  • 2 teaspoons Vanilla Bean Sugar
  • ¼ cup unsweetened apple juice

Method

  1. Heat 1 cup water to 175°F. Steep the Bi Luo Chun for 2–3 minutes, then strain or remove the tea bag.
  2. Dissolve the sugar in the tea and refrigerate until cold.
  3. Blend the tea, half the fruit, apple juice and pistachios until smooth. Divide into two bowls and scatter the remaining fruit over the top. Serve chilled.
