Traditional Lapsang Souchong is a black tea style known for deep, smoky notes. Brew it on its own or pair its robust character with a savory meal.

How to brew

  • Tea: 2.5 g of dry tea per 8 fl oz (240 ml) of water
  • Water temperature: 212°F (100°C)
  • Steep time: 3–5 minutes, then strain or remove the tea bag.
  • Cups per ounce: Approximately 11 cups per ounce (28.35 g), using 2.5 g per 8-fl-oz cup. This estimate counts the first infusion only.

Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Apple & Maple Warm Tea Cup with Traditional Lapsang Souchong

Serves: 2

Ingredients

  • 2.5 g Traditional Lapsang Souchong
  • 1 cup water
  • 1 cup peeled, cored apple, finely diced
  • 2 teaspoons pure maple syrup
  • 2 teaspoons Maple Sugar
  • ½ cup additional water

Method

  1. Heat 1 cup water to 212°F. Steep the Traditional Lapsang Souchong for 3–5 minutes, then strain or remove the tea bag.
  2. While the tea brews, gently simmer the fruit, maple syrup and additional water in a separate pan for 5–8 minutes, until the fruit softens.
  3. Stir the sugar and strained tea into the fruit mixture. Divide between two mugs, including the fruit, and serve warm.
