How to brew

  • Tea: 2.5 g of dry tea per 8 fl oz (240 ml) of water
  • Water temperature: 212°F (100°C)
  • Steep time: 3–5 minutes, then strain or remove the tea bag.
  • Cups per ounce: Approximately 11 cups per ounce (28.35 g), using 2.5 g per 8-fl-oz cup. This estimate counts the first infusion only.

Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Orange & Cardamom Tea Jelly Cups with Masala Chai

Serves: 4

Ingredients

  • 2.5 g Masala Chai
  • 1 cup water
  • 1 cup orange segments, seeds and membranes removed
  • ⅛ teaspoon Cardamom Powder
  • 2 teaspoons unflavored powdered gelatin
  • ½ cup cold water
  • ½ cup unsweetened apple juice
  • 2 tablespoons Vanilla Bean Sugar

Method

  1. Heat 1 cup water to 212°F. Steep the Masala Chai for 3–5 minutes, then strain or remove the tea bag.
  2. Sprinkle the gelatin over the cold water and let bloom for 5 minutes. Stir the sugar and cardamom into the hot, strained tea.
  3. Whisk the hot tea into the softened gelatin until completely dissolved. Add the apple juice.
  4. Divide the fruit between four small cups. Pour in the gelatin mixture and refrigerate for at least 4 hours, until set.
