Keemun Mao Feng
Keemun Mao Feng is a whole-leaf black tea from the Qimen area of Anhui, China. Keemun is often used in breakfast blends, but this tea lets its own leaf character come forward.
Its tightly rolled, fully oxidized leaves make a deep and fragrant cup. Try the first infusion plain to notice the tea’s own aroma, then adjust the next steep or add milk to suit your preference.

How to brew
- Tea: 2.5 g of dry tea per 8 fl oz (240 ml) of water
- Water temperature: 212°F (100°C)
- Steep time: 3–5 minutes, then strain or remove the tea bag.
- Cups per ounce: Approximately 11 cups per ounce (28.35 g), using 2.5 g per 8-fl-oz cup. This estimate counts the first infusion only.
Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Pear & Hazelnut Tea-Dressed Fruit Salad with Keemun Mao Feng
Serves: 4
Ingredients
- 2.5 g Keemun Mao Feng
- 1 cup water
- 2 cups ripe pear, cored and diced
- 2 tablespoons finely chopped toasted hazelnuts
- 1 cup halved seedless grapes
- 1 tablespoon Vanilla Bean Sugar
- 1 tablespoon lime juice
Method
- Heat 1 cup water to 212°F. Steep the Keemun Mao Feng for 3–5 minutes, then strain or remove the tea bag.
- Dissolve the sugar in the tea and chill. Whisk ¼ cup cold tea with the lime juice and hazelnuts; reserve the remaining tea to drink.
- Toss the fruit and grapes with the dressing. Let stand in the refrigerator for 15 minutes before serving.
