How to brew
- Tea: 2.5 g of dry tea per 8 fl oz (240 ml) of water
- Water temperature: 200°F (93°C)
- Steep time: 3 minutes, then strain or remove the tea bag.
- Cups per ounce: Approximately 11 cups per ounce (28.35 g), using 2.5 g per 8-fl-oz cup. This estimate counts the first infusion only.
Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Blueberry & Maple Tea Sorbet Float with Darjeeling
Serves: 2
Ingredients
- 2.5 g Darjeeling
- 1 cup water
- 1 cup blueberries
- 2 teaspoons pure maple syrup
- 1 teaspoon Maple Sugar
- 2 small scoops lemon sorbet
- ½ cup chilled plain sparkling water
Method
- Heat 1 cup water to 200°F. Steep the Darjeeling for 3 minutes, then strain or remove the tea bag.
- Stir the sugar into the tea, then chill. Mash the fruit with the maple syrup and divide between two tall glasses.
- Add the cold tea and a scoop of sorbet to each glass. Pour the sparkling water slowly down the sides and serve with spoons.
