Pear & Ginger Chilled Spiced Fruit Soup with Date Balsamic

Serves: 2

Ingredients

1 tablespoon Date Balsamic
1 cup water
2 cups ripe pear, cored and diced
¼ teaspoon Ginger Root, powder
2 teaspoons Vanilla Bean Sugar
¼ cup unsweetened apple juice

Method

Stir the Date Balsamic into 1 cup warm water until evenly mixed.
Dissolve the sugar in the prepared mixture and refrigerate until cold.
Blend the prepared mixture, half the fruit, apple juice and ground ginger until smooth. Divide into two bowls and scatter the remaining fruit over the top. Serve chilled.
