How to brew

  • Tea: 2.5 g of dry tea per 8 fl oz (240 ml) of water
  • Water temperature: 185°F (85°C)
  • Steep time: 3–5 minutes, then strain or remove the tea bag.
  • Cups per ounce: Approximately 11 cups per ounce (28.35 g), using 2.5 g per 8-fl-oz cup. This estimate counts the first infusion only.

Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Strawberry & Basil Tea Granita with Yerba Mate

Serves: 4

Ingredients

  • 2.5 g Yerba Mate
  • 1 cup water
  • 2 cups hulled strawberries, sliced
  • 1 tablespoon finely chopped fresh basil
  • ¼ cup Vanilla Bean Sugar
  • 1 tablespoon lemon juice

Method

  1. Heat 1 cup water to 185°F. Steep the Yerba Mate for 3–5 minutes, then strain or remove the tea bag.
  2. Dissolve the sugar in the tea and let cool. Blend with the fruit, fresh basil and lemon juice.
  3. Pour into a shallow freezer-safe dish. Freeze for 3–4 hours, scraping with a fork every 30–45 minutes, until flaky. Spoon into four chilled bowls.
