Pear & Vanilla Spiced Rice Pudding with Vanilla Bean Vial

Ingredients

  • ½ bean Vanilla Bean Vial
  • 1 cup water
  • 1 cup ripe pear, cored and diced
  • ¼ teaspoon vanilla extract
  • 1½ cups cooked rice
  • 1 cup milk or oat milk
  • 2 tablespoons Vanilla Bean Sugar

Method

  1. Split the vanilla bean lengthwise and scrape out the seeds. Simmer the seeds and pod in 1 cup water, covered, for 5 minutes. Remove the pod; top the liquid back up to 1 cup.
  2. Combine the prepared mixture, cooked rice, milk, sugar and vanilla extract in a saucepan. Simmer gently for 15–20 minutes, stirring often, until creamy.
  3. Fold in the fruit and warm for 2 minutes. Divide into bowls. Refrigerate leftovers promptly.
