Turmeric Root Organic
Organic turmeric is a golden rhizome from the ginger family with a warm, earthy and gently bitter taste. Its strong color and flavor are familiar in curry blends, rice dishes and sauces.
Use the dried root according to the package directions, or combine it with ginger and cinnamon in a botanical infusion. Turmeric used as a culinary spice differs from concentrated curcumin extracts studied in research; see the linked ingredient information below.

Zucchini & Pea Lentil Bowl with Turmeric Root

Ingredients
- ½ teaspoon finely grated or ground Turmeric Root
- 1 tablespoon Arbequina Extra Virgin Olive Oil
- 1 tablespoon lemon juice
- 2 cups zucchini, cut into ½-inch pieces
- 2 cups thawed peas
- 1 tablespoon neutral cooking oil
- 1 cup dry brown or green lentils, rinsed
- 3 cups water
- 2 tablespoons chopped fresh parsley
Method
- Finely grate fresh turmeric root, or grind dried root, before measuring.
- Mix the featured seasoning with the olive oil and lemon juice.
- Simmer the lentils in the water for 20–30 minutes, until tender; drain excess water.
- Heat the neutral oil in a large skillet over medium heat. Add zucchini, cut into ½-inch pieces and thawed peas. Cook for 3 minutes, then add ¼ cup water, cover and cook for 8–15 minutes, until tender. Uncover to evaporate excess water.
- Fold the cooked lentils and seasoning mixture into the vegetables. Warm through and finish with parsley.
