Mango & Coconut Sweet Semolina Pudding with Toasted Coconut Sugar

Serves: 2

Ingredients

2 tablespoons Toasted Coconut Sugar
1 cup water
1 cup ripe mango, peeled and diced
2 tablespoons unsweetened shredded coconut
¼ cup fine semolina
1 cup milk or oat milk
2 tablespoons Vanilla Bean Sugar

Method

Stir the Toasted Coconut Sugar into 1 cup warm water until evenly mixed.
Combine the prepared mixture, milk, sugar and shredded coconut in a saucepan. Bring to a gentle simmer.
Whisk in the semolina in a thin stream. Cook 4–6 minutes, stirring, until thick and smooth. Divide between two bowls and top with the fruit.
