Watermelon & Basil Tea Jelly Cups with Peppermint Leaf

Serves: 4

Ingredients

• 2 g Peppermint Leaf
• 1 cup water
• 1 cup seedless watermelon, diced
• 1 tablespoon finely chopped fresh basil
• 2 teaspoons unflavored powdered gelatin
• ½ cup cold water
• ½ cup unsweetened apple juice
• 2 tablespoons Vanilla Bean Sugar

Method

1. Heat 1 cup water to 212°F. Steep the Peppermint Leaf for 5–7 minutes, then strain or remove the tea bag.
2. Sprinkle the gelatin over the cold water and let bloom for 5 minutes. Stir the sugar and fresh basil into the hot, strained tea.
3. Whisk the hot tea into the softened gelatin until completely dissolved. Add the apple juice.
4. Divide the fruit between four small cups. Pour in the gelatin mixture and refrigerate for at least 4 hours, until set.
