Cucumber & Lemon Tea Sparkler with Earl Grey Tea

Ingredients

• 2.5 g Earl Grey Tea
• 1 cup water
• 1 cup peeled cucumber, finely diced
• 1 teaspoon finely grated lemon zest
• 2 teaspoons Lemon Sugar
• 1 cup chilled plain sparkling water
• Ice

Method

1. Heat 1 cup water to 212°F. Steep the Earl Grey Tea for 3–5 minutes, then strain or remove the tea bag.
2. Stir the sugar into the strained tea and chill promptly. Mash the fruit lightly with the lemon zest.
3. Divide the fruit and ice between two glasses. Add the cold tea and sparkling water, stir gently and serve.
