How to brew
- Tea: 2 g of dry tea per 8 fl oz (240 ml) of water
- Water temperature: 190°F (88°C)
- Steep time: 3–4 minutes, then strain or remove the tea bag.
- Cups per ounce: Approximately 14 cups per ounce (28.35 g), using 2 g per 8-fl-oz cup. This estimate counts the first infusion only.

Ingredients
- 2 g spiced white pear
- 1 cup water
- 1 cup ripe pear, cored and diced
- ¼ teaspoon vanilla extract
- ¼ cup quick-cooking tapioca pearls
- 2 teaspoons Vanilla Bean Sugar
- ½ cup cold water
- Ice
Method
- Heat 1 cup water to 190°F. Steep the spiced white pear for 3–4 minutes, then strain or remove the tea bag.
- Stir the sugar into the tea and chill. Cook the tapioca pearls according to their package, drain and let cool slightly.
- Mash or blend the fruit with the vanilla extract and cold water. Divide the pearls between two glasses, add ice, then the fruit mixture and tea. Serve immediately with spoons or wide straws.
