Royal Gui Fei Oolong
Royal Gui Fei is a Taiwanese oolong with a distinctive honey-like sweetness. Our original notes describe the Gui Fei style as involving leafhopper visits to the tea leaves during growth, which contribute to the tea’s aromatic character.
Brew the leaf using the oolong guide below and taste the first cup plain for its rounded sweet note. A second infusion of the same leaves can bring out a different balance of fragrance and tea body.

Ingredients: Oolong Tea
How to brew
- Tea: 2.5 g of dry tea per 8 fl oz (240 ml) of water
- Water temperature: 195°F (91°C)
- Steep time: 3–5 minutes, then strain or remove the tea bag.
- Cups per ounce: Approximately 11 cups per ounce (28.35 g), using 2.5 g per 8-fl-oz cup. This estimate counts the first infusion only.
Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Peach & Vanilla Tea Ice Pops with Royal Gui Fei Oolong
Serves: 6 small pops
Ingredients
- 2.5 g Royal Gui Fei Oolong
- 1 cup water
- 2 cups ripe peach, pitted and diced
- ¼ teaspoon vanilla extract
- 2 tablespoons Vanilla Bean Sugar
Method
- Heat 1 cup water to 195°F. Steep the Royal Gui Fei Oolong for 3–5 minutes, then strain or remove the tea bag.
- Dissolve the sugar in the strained tea and cool. Blend with the fruit and vanilla extract.
- Pour into freezer-pop molds, leaving a little space for expansion. Insert sticks and freeze until solid, at least 6 hours.
