Pear & Pistachio Chocolate Tea Sundae with Rooibos

Serves: 2

Ingredients

• 2.5 g Rooibos
• 1 cup water
• 1 cup ripe pear, cored and diced
• 2 tablespoons chopped shelled pistachios
• ⅓ cup chopped dark chocolate
• 2 teaspoons Vanilla Bean Sugar
• 2 scoops vanilla ice cream

Method

1. Heat 1 cup water to 212°F. Steep the Rooibos for 5–7 minutes, then strain or remove the tea bag.
2. Place the chocolate, sugar and ¼ cup hot brewed tea in a heatproof bowl. Stir until smooth; reserve the remaining tea to drink. Fold in the pistachios.
3. Divide the ice cream and fruit between two bowls and drizzle with the warm chocolate-tea sauce.
