Strawberry & Basil Chilled Tea Fruit Soup with Earl Grey Tea

Ingredients

• 2.5 g Earl Grey Tea
• 1 cup water
• 2 cups hulled strawberries, sliced
• 1 tablespoon finely chopped fresh basil
• 2 teaspoons Vanilla Bean Sugar
• ¼ cup unsweetened apple juice

Method

1. Heat 1 cup water to 212°F. Steep the Earl Grey Tea for 3–5 minutes, then strain or remove the tea bag.
2. Dissolve the sugar in the tea and refrigerate until cold.
3. Blend the tea, half the fruit, apple juice and fresh basil until smooth. Divide into two bowls and scatter the remaining fruit over the top. Serve chilled.
