How to brew
- Tea: 2.5 g of dry tea per 8 fl oz (240 ml) of water
- Water temperature: 200°F (93°C)
- Steep time: 3 minutes, then strain or remove the tea bag.
- Cups per ounce: Approximately 11 cups per ounce (28.35 g), using 2.5 g per 8-fl-oz cup. This estimate counts the first infusion only.

Apple & Maple Tea Boba Cooler with Pineapple Darjeeling

Ingredients
- 2.5 g Pineapple Darjeeling
- 1 cup water
- 1 cup peeled, cored apple, finely diced
- 2 teaspoons pure maple syrup
- ¼ cup quick-cooking tapioca pearls
- 2 teaspoons Maple Sugar
- ½ cup cold water
- Ice
Method
- Heat 1 cup water to 200°F. Steep the Pineapple Darjeeling for 3 minutes, then strain or remove the tea bag.
- Stir the sugar into the tea and chill. Cook the tapioca pearls according to their package, drain and let cool slightly.
- Mash or blend the fruit with the maple syrup and cold water. Divide the pearls between two glasses, add ice, then the fruit mixture and tea. Serve immediately with spoons or wide straws.
