This white balsamic vinegar is made in Modena, Italy, from local grapes and aged in oak barrels. The peaches are picked perfectly ripe, crushed and left to ferment naturally , then added for a sweet and fruity vinegar. We recommend it on red meat and game, green and fruit salads, fish, ice cream, and fresh soft mild cheeses.

Brussels Sprout & Apple Warm Potato Salad with Peach White Balsamic Vinegar

Serves: 4

Ingredients

  • 2 tablespoons Peach White Balsamic Vinegar
  • 1 tablespoon Arbequina Extra Virgin Olive Oil
  • ⅛ teaspoon Black Peppercorn Ground Fine
  • 2 cups Brussels sprouts, trimmed and quartered
  • 2 cups cored apple, cut into ½-inch pieces
  • 1 tablespoon neutral cooking oil
  • 1 lb baby potatoes, cut into bite-size pieces
  • 1 tablespoon Dijon mustard
  • 2 tablespoons chopped fresh chives

Method

  1. Whisk the featured balsamic with the olive oil and black pepper.
  2. Simmer the potatoes in water for 12–15 minutes, until tender; drain well.
  3. Heat the neutral oil in a large skillet over medium heat. Add Brussels sprouts, trimmed and quartered and cored apple, cut into ½-inch pieces. Cook for 3 minutes, then add ¼ cup water, cover and cook for 8–15 minutes, until tender. Uncover to evaporate excess water.
  4. Whisk Dijon into the prepared seasoning mixture. Toss with the warm potatoes and vegetables; finish with chives.
