Greek oregano, also known as Mediterranean oregano, is native to and cultivated throughout Greece, Turkey, Egypt and Italy.

This is the classic “pizza herb” most people are familiar with. It also pairs well with meats, rice, vegetable and cheese dishes and tomato-based soups and stews.

It may help rebalance gut flora (parasites, yeast, bacterial overgrowth). Often used at the first sign of illness or during short-term immune challenges.

Pepper & Onion Ricotta Toasts with Oregano (Greek) c/s

Serves: 4

Ingredients

  • 1 teaspoon Oregano (Greek) c/s
  • 1 tablespoon Arbequina Extra Virgin Olive Oil
  • 1 tablespoon lemon juice
  • 2 cups bell pepper strips
  • 2 cups thinly sliced onion
  • 1 tablespoon neutral cooking oil
  • 8 slices crusty bread
  • 1 cup ricotta
  • 2 tablespoons chopped fresh basil

Method

  1. Mix the featured seasoning with the olive oil and lemon juice.
  2. Heat the neutral oil in a large skillet over medium heat. Add bell pepper strips and thinly sliced onion. Cook for 3 minutes, then add ¼ cup water, cover and cook for 8–15 minutes, until tender. Uncover to evaporate excess water.
  3. Toast the bread and spread with ricotta. Toss the cooked vegetables with the seasoning mixture, spoon over the toasts and finish with basil.
