This balsamic mixes the rich sweet flavors of caramelized onions with those of a well aged balsamic making for a fabulous condiment that plays the sweetness of the caramelized onions off the slight sourness of the vinegar. Use it to add a special unusual element to any dish that would be good with caramelized onions from pasta to grilled or braised meats. Cauliflower & Olive Roasted Vegetable Dip with Glazed Onion Balsamic Vinegar

Serves: 4

Ingredients

  • 2 tablespoons Glazed Onion Balsamic Vinegar
  • 1 tablespoon Arbequina Extra Virgin Olive Oil
  • ⅛ teaspoon Black Peppercorn Ground Fine
  • 2 cups small cauliflower florets
  • 2 cups pitted olives, halved
  • 1 tablespoon neutral cooking oil
  • ½ cup thick plain yogurt
  • 2 tablespoons tahini
  • Pita wedges, for serving

Method

  1. Whisk the featured balsamic with the olive oil and black pepper.
  2. Heat the neutral oil in a large skillet over medium heat. Add small cauliflower florets and pitted olives, halved. Cook for 3 minutes, then add ¼ cup water, cover and cook for 8–15 minutes, until tender. Uncover to evaporate excess water.
  3. Let the cooked vegetables cool until just warm. Blend with the yogurt, tahini and seasoning mixture until mostly smooth. Spoon into a bowl and serve with pita wedges.
