Garlic, affectionately known as "the stinking rose," is a member of the onion family that is native to central and southwestern Asia. Although the leaves and flowers of the plant are edible the real prize is the mature bulb, which is separated into multiple "cloves."

Granulated garlic is a convenient way to get full-bodied garlic flavor into soups, stews and other foods.

It may help rebalance gut flora (parasites, yeast, bacterial overgrowth). Traditionally used to help the body defend against pathogens.

Sweet Potato & Red Onion Stuffed Pepper Boats with Garlic Minced

Serves: 4

Ingredients

  • 2 teaspoons Garlic Minced
  • 1 tablespoon Arbequina Extra Virgin Olive Oil
  • 1 tablespoon lemon juice
  • 2 cups peeled sweet potato, cut into ½-inch cubes
  • 2 cups red onion, cut into wedges
  • 1 tablespoon neutral cooking oil
  • 4 large bell peppers, halved lengthwise and seeded
  • 2 cups cooked rice
  • ½ cup grated mozzarella

Method

  1. Mix the featured seasoning with the olive oil and lemon juice.
  2. Heat the oven to 375°F. Place the pepper halves in a baking dish with ¼ cup water and bake for 15 minutes.
  3. Heat the neutral oil in a large skillet over medium heat. Add peeled sweet potato, cut into ½-inch cubes and red onion, cut into wedges. Cook for 3 minutes, then add ¼ cup water, cover and cook for 8–15 minutes, until tender. Uncover to evaporate excess water.
  4. Mix the cooked vegetables with the rice and seasoning mixture. Fill the pepper halves, top with mozzarella and bake 20–25 minutes more, until the peppers are tender and filling is hot.
