How to brew
- Tea: 2.5 g of dry tea per 8 fl oz (240 ml) of water
- Water temperature: 205°F (96°C)
- Steep time: 3–5 minutes, then strain or remove the tea bag.
- Cups per ounce: Approximately 11 cups per ounce (28.35 g), using 2.5 g per 8-fl-oz cup. This estimate counts the first infusion only.
Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Pear & Pistachio Tea Couscous Salad with Dan Cong Ya Shi Duck Shit
Serves: 2
Ingredients
- 2.5 g Dan Cong Ya Shi Duck Shit
- 1 cup water
- 1 cup ripe pear, cored and diced
- 2 tablespoons chopped shelled pistachios
- ¾ cup dry couscous
- 1 tablespoon Arbequina Extra Virgin Olive Oil
- 1 tablespoon lemon juice
- 2 tablespoons chopped fresh parsley
- Salt to taste
Method
- Heat 1 cup water to 205°F. Steep the Dan Cong Ya Shi Duck Shit for 3–5 minutes, then strain or remove the tea bag.
- Bring the strained tea just to a boil. Pour over the couscous, cover and let stand for 5 minutes. Fluff with a fork.
- Fold in the fruit, pistachios, olive oil, lemon juice and parsley. Season lightly; serve warm or chill promptly for a cold salad.
