Cinnamon is an important culinary seasoning in Indian, Asian and Middle Eastern cuisines.
Whole sticks are used to infuse cinnamon flavor into soups, culinary oils, hot tea and various liquors. In contrast to the bay leaf, the cinnamon stick is usually easy to retrieve from the food before serving.

Apple & Cardamom Spiced Jelly Cups with Cinnamon Sticks (Ceylon)
Serves: 4
Ingredients
- 1 small cinnamon stick Cinnamon Sticks (Ceylon)
- 1 cup water
- 1 cup peeled, cored apple, finely diced
- ⅛ teaspoon Cardamom Powder
- 2 teaspoons unflavored powdered gelatin
- ½ cup cold water
- ½ cup unsweetened apple juice
- 2 tablespoons Vanilla Bean Sugar
Method
- Simmer the cinnamon in 1 cup water, covered, for 8 minutes. Strain out all cinnamon pieces; top the liquid back up to 1 cup with water.
- Sprinkle the gelatin over the cold water and let bloom for 5 minutes. Stir the sugar and cardamom into the prepared mixture.
- Whisk the hot prepared mixture into the softened gelatin until completely dissolved. Add the apple juice.
- Divide the fruit between four small cups. Pour in the gelatin mixture and refrigerate for at least 4 hours, until set.

Flavor: sweet, warm cinnamon.
