Chunmee means eyebrow tea, a name that refers to the curve of its rolled Chinese green tea leaves. The shop’s original notes describe the leaf being shaped and pan-fired before brewing.

How to brew

  • Tea: 2.5 g of dry tea per 8 fl oz (240 ml) of water
  • Water temperature: 175°F (79°C)
  • Steep time: 2–3 minutes, then strain or remove the tea bag.
  • Cups per ounce: Approximately 11 cups per ounce (28.35 g), using 2.5 g per 8-fl-oz cup. This estimate counts the first infusion only.

Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Peach & Basil Coconut Tea Latte with Chunmee Green

Serves: 2

Ingredients

  • 2.5 g Chunmee Green
  • 1 cup water
  • 1 cup ripe peach, pitted and diced
  • 1 tablespoon finely chopped fresh basil
  • 1 cup unsweetened coconut beverage
  • 2 teaspoons Vanilla Bean Sugar

Method

  1. Heat 1 cup water to 175°F. Steep the Chunmee Green for 2–3 minutes, then strain or remove the tea bag.
  2. Blend the fruit with the unsweetened coconut beverage until smooth. Warm gently in a saucepan, stirring; do not bring to a rolling boil.
  3. Stir the sugar and fresh basil into the strained tea. Divide between two mugs, pour in the warm fruit milk and whisk briefly to combine.
