Chrysanthemum
These dried chrysanthemum flowers steep into a pale, gently floral herbal cup. The whole flowers make a simple infusion with an aroma that is softer than strongly scented jasmine or hibiscus.
Try them on their own using the brewing guide below, then pair a small amount with green tea or another mild botanical if you enjoy floral blends. Strain the flowers before serving and check the package for any botanical identification you need.

How to brew
- Tea: 2 g of dry tea per 8 fl oz (240 ml) of water
- Water temperature: 212°F (100°C)
- Steep time: 5–7 minutes, then strain or remove the tea bag.
- Cups per ounce: Approximately 14 cups per ounce (28.35 g), using 2 g per 8-fl-oz cup. This estimate counts the first infusion only.
Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Kiwi & Mint Tea-Dressed Fruit Salad with Chrysanthemum
Serves: 4
Ingredients
- 2 g Chrysanthemum
- 1 cup water
- 2 cups kiwifruit, peeled and diced
- 1 tablespoon finely chopped fresh mint
- 1 cup halved seedless grapes
- 1 tablespoon Vanilla Bean Sugar
- 1 tablespoon lime juice
Method
- Heat 1 cup water to 212°F. Steep the Chrysanthemum for 5–7 minutes, then strain or remove the tea bag.
- Dissolve the sugar in the tea and chill. Whisk ¼ cup cold tea with the lime juice and fresh mint; reserve the remaining tea to drink.
- Toss the fruit and grapes with the dressing. Let stand in the refrigerator for 15 minutes before serving.
