To make chorizo, add 1 pound of ground pork to 1 ounce of chorizo seasoning and 3 tablespoons of cider vinegar, mix thoroughly and let sit overnight before cooking.

Sweet Potato & Red Onion Farro Salad with Chorizo Seasoning

Ingredients

  • 1 teaspoon Chorizo Seasoning
  • 1 tablespoon Arbequina Extra Virgin Olive Oil
  • 1 tablespoon lemon juice
  • 2 cups peeled sweet potato, cut into ½-inch cubes
  • 2 cups red onion, cut into wedges
  • 1 tablespoon neutral cooking oil
  • 1 cup dry farro
  • ¼ cup chopped walnuts
  • 2 tablespoons chopped fresh parsley

Method

  1. If the blend contains coarse leaf pieces, grind it to a fine powder before measuring.
  2. Mix the featured seasoning with the olive oil and lemon juice.
  3. Cook the farro according to its package and drain.
  4. Heat the neutral oil in a large skillet over medium heat. Add peeled sweet potato, cut into ½-inch cubes and red onion, cut into wedges. Cook for 3 minutes, then add ¼ cup water, cover and cook for 8–15 minutes, until tender. Uncover to evaporate excess water.
  5. Toss the farro and cooked vegetables with the seasoning mixture. Add walnuts and parsley. Serve warm or cool promptly for a chilled salad.
