Radish & Snap Pea Orzo Salad with Chives, c/s
Serves: 4
Ingredients
- 1 teaspoon Chives, c/s
- 1 tablespoon Arbequina Extra Virgin Olive Oil
- 1 tablespoon lemon juice
- 2 cups radishes, quartered
- 2 cups sugar snap peas, strings removed
- 1 tablespoon neutral cooking oil
- 1 cup dry orzo
- ½ cup crumbled feta
- 2 tablespoons chopped fresh dill
Method
- Mix the featured seasoning with the olive oil and lemon juice.
- Cook the orzo according to the package; drain.
- Heat the neutral oil in a large skillet over medium heat. Add radishes, quartered and sugar snap peas, strings removed. Cook for 3 minutes, then add ¼ cup water, cover and cook for 8–15 minutes, until tender. Uncover to evaporate excess water.
- Toss the orzo, vegetables and seasoning mixture together. Fold in the feta and dill and serve warm or chill promptly.
