Zucchini & Pea Sheet-Pan Gnocchi with Chipotle Pepper Ground

Ingredients

  • ½ teaspoon Chipotle Pepper Ground
  • 1 tablespoon Arbequina Extra Virgin Olive Oil
  • 1 tablespoon lemon juice
  • 2 cups zucchini, cut into ½-inch pieces
  • 2 cups thawed peas
  • 1 tablespoon neutral cooking oil
  • 1 package (16 oz) shelf-stable potato gnocchi
  • ¼ cup grated Parmesan
  • 2 tablespoons chopped fresh basil

Method

  1. Mix the featured seasoning with the olive oil and lemon juice.
  2. Heat the oven to 400°F. Toss the vegetables and uncooked shelf-stable gnocchi with the neutral oil on a large rimmed baking sheet.
  3. Roast for 25–35 minutes, turning halfway, until the vegetables are tender and gnocchi edges are golden. Toss with the seasoning mixture, Parmesan and basil.
