Sweet Potato & Red Onion Flatbread with Carolina Reaper Salt

Ingredients

• a small pinch Carolina Reaper Salt
• 1 tablespoon Arbequina Extra Virgin Olive Oil
• 1 tablespoon lemon juice
• 2 cups peeled sweet potato, cut into ½-inch cubes
• 2 cups red onion, cut into wedges
• 1 tablespoon neutral cooking oil
• 2 large ready-baked flatbreads
• ½ cup thick plain yogurt
• ½ cup crumbled feta

Method

1. Mix the featured seasoning with the olive oil and lemon juice.
2. Heat the oven to 400°F. Toss the prepared vegetables with the neutral oil on a rimmed baking sheet. Roast for 25–35 minutes, stirring halfway, until tender and lightly browned.
3. Spread the flatbreads with yogurt, then add the cooked vegetables and feta. Bake at 400°F for 6–8 minutes, until hot and crisp at the edges. Drizzle with the seasoning mixture and cut into wedges.
