How to brew

  • Tea: 2.5 g of dry tea per 8 fl oz (240 ml) of water
  • Water temperature: 175°F (79°C)
  • Steep time: 2–3 minutes, then strain or remove the tea bag.
  • Cups per ounce: Approximately 11 cups per ounce (28.35 g), using 2.5 g per 8-fl-oz cup. This estimate counts the first infusion only.

Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Melon & Mint Tea Sorbet with Carolina Mint Tea

Serves: 4

Ingredients

  • 2.5 g Carolina Mint Tea
  • 1 cup water
  • 2 cups ripe honeydew melon, peeled, seeded and diced
  • 1 tablespoon finely chopped fresh mint
  • ¼ cup Vanilla Bean Sugar
  • 1 tablespoon lemon juice

Method

  1. Heat 1 cup water to 175°F. Steep the Carolina Mint Tea for 2–3 minutes, then strain or remove the tea bag.
  2. Dissolve the sugar in the tea and cool. Blend the tea, fruit, fresh mint and lemon juice until smooth.
  3. Freeze in a shallow container until firm, about 4 hours. Break into chunks and pulse in a food processor until creamy. Return to the freezer for 30 minutes, then scoop.
