Apple & Cardamom Spiced Chia Pots with Cardamom, Green Whole

Serves: 2

Ingredients

  • 2 green pods Cardamom, Green Whole
  • 1 cup water
  • 1 cup peeled, cored apple, finely diced
  • ⅛ teaspoon Cardamom Powder
  • ¼ cup chia seeds
  • 2 teaspoons Vanilla Bean Sugar

Method

  1. Crack the cardamom pods. Simmer in 1 cup water, covered, for 5 minutes, then strain out all pod and seed pieces. Top the liquid back up to 1 cup.
  2. Dissolve the sugar in the prepared mixture and cool. Stir in the chia seeds and cardamom. Stir again after 10 minutes to break up clumps.
  3. Cover and refrigerate for at least 4 hours. Divide into two bowls and top with the fruit.
