Pineapple Ghost-Pepper Black Bean Salsa

Serves: 4

Ingredients

  • 1 rice-grain-sized piece of Bhut Jolokia Pepper
  • 1 tablespoon Arbequina Extra Virgin Olive Oil
  • 1 tablespoon lime juice
  • 1 cup finely diced pineapple
  • 1 cup canned black beans, drained and rinsed
  • 2 tablespoons finely chopped red onion
  • 1 tablespoon chopped fresh cilantro
  • A pinch of salt

Method

  1. Wear gloves and use clean kitchen shears to snip off a rice-grain-sized piece of pepper. Avoid contact with your eyes and face.
  2. Warm the olive oil gently over low heat with the tiny pepper piece for 1 minute; do not let it smoke. Remove and discard the pepper piece, then cool the oil.
  3. Toss the fruit, vegetables or beans, onion and cilantro with the cooled oil and lime juice. Season lightly and serve in small portions.

This is an extremely hot pepper; begin with the tiny amount stated and do not substitute a whole pepper.
