Fiery and complex, Berbere is an important spice blend in Ethiopian and Eritrean cuisine. The earthy and pungent spice notes can be used in casseroles, curries, baked vegetable dishes, to season grilled meat or vegetables, and blended into a paste. Our version is spicy and vibrant, but not overwhelming.

Pumpkin & Spinach Pasta Toss with Berbere
Serves: 4
Ingredients
- 1 teaspoon Berbere
- 1 tablespoon Arbequina Extra Virgin Olive Oil
- 1 tablespoon lemon juice
- 2 cups peeled pumpkin, cut into ½-inch cubes
- 2 cups baby spinach
- 1 tablespoon neutral cooking oil
- 8 oz dry penne pasta
- ¼ cup grated Parmesan
- 2 tablespoons chopped fresh parsley
Method
- Mix the featured seasoning with the olive oil and lemon juice.
- Cook the pasta according to its package; reserve ½ cup cooking water before draining.
- Heat the neutral oil in a large skillet over medium heat. Add peeled pumpkin, cut into ½-inch cubes. Cook for 3 minutes, then add ¼ cup water, cover and cook for 8–15 minutes, until tender. Uncover to evaporate excess water. Stir in baby spinach and cook until wilted.
- Add the pasta, prepared seasoning mixture and enough reserved water to coat. Toss over low heat for 1 minute, then add Parmesan and parsley.
