Ingredients: Green Tea, Cinnamon, Cinnamon Sugar (Sugar, Burnt Sugar, Glucose Syrup, Cinnamon), Fennel, Pink Peppercorn, Apricot (Apricot, Rice Flour), Cloves, Ginger

How to brew

  • Tea: 2.5 g of dry tea per 8 fl oz (240 ml) of water
  • Water temperature: 175°F (79°C)
  • Steep time: 2–3 minutes, then strain or remove the tea bag.
  • Cups per ounce: Approximately 11 cups per ounce (28.35 g), using 2.5 g per 8-fl-oz cup. This estimate counts the first infusion only.

Method

  1. Heat 1 cup water to 175°F. Steep the Apricot Chai for 2–3 minutes, then strain or remove the tea bag.
  2. Combine the strained tea, milk, sugar and cinnamon in a saucepan. Bring to a gentle simmer.
  3. Whisk in the semolina in a thin stream. Cook 4–6 minutes, stirring, until thick and smooth. Divide between two bowls and top with the fruit.
