Also known as Mexican pimento, allspice comes from a type of myrtle tree and is one of the top seasonings in Mexican cuisine. The whole berries add the flavors of cinnamon, cloves, nutmeg and juniper to foods and tea blends.

Apricot & Cardamom Spiced Chia Pots with Allspice, Whole

Ingredients
- 3 whole berries Allspice, Whole
- 1 cup water
- 1 cup ripe apricot, pitted and diced
- ⅛ teaspoon Cardamom Powder
- ¼ cup chia seeds
- 2 teaspoons Vanilla Bean Sugar
Method
- Lightly crush the allspice berries. Simmer in 1 cup water, covered, for 8 minutes, then strain thoroughly. Top the liquid back up to 1 cup.
- Dissolve the sugar in the prepared mixture and cool. Stir in the chia seeds and cardamom. Stir again after 10 minutes to break up clumps.
- Cover and refrigerate for at least 4 hours. Divide into two bowls and top with the fruit.

Flavor: warm notes reminiscent of clove, cinnamon and nutmeg.
