Ingredients
- ribeye steaks
- garlic
- fresh rosemary
- unsalted butter
- kosher salt
- black pepper
- olive oil
- juiced
Directions
- In a small bowl, combine the softened butter, minced garlic, chopped rosemary, and a pinch of salt. Mix well and set aside to allow the flavors to meld.
- Season the ribeye steaks generously with kosher salt and black pepper on both sides, pressing the seasonings into the meat.
- In a large cast-iron skillet, heat the olive oil over medium-high heat until shimmering, about 2 minutes.
- Carefully place the seasoned steaks in the skillet. Sear for 4-5 minutes without moving them, until a golden-brown crust forms.
- Flip the steaks and cook for another 3-4 minutes for medium-rare, or until they reach an internal temperature of 130°F (54°C). Adjust cooking time for desired doneness.
- In the last minute of cooking, add the garlic rosemary butter to the pan. Spoon the melted butter over the steaks continuously, allowing the flavors to infuse, for about 1 minute.
- Remove the skillet from heat and transfer the steaks to a cutting board. Let them rest for at least 5 minutes to retain their juices.
- Drizzle the steaks with fresh lemon juice before slicing against the grain. Serve with the pan drippings drizzled on top.
